A cake for their first birthday and not only children will fall in love with them. I baked this cake for the third time this week. It’s just great and balanced in taste, and I wanted to try it a few times before I will give you the recipe. And I really fell in love with it too, it’s great for breakfast. Thanks to its composition, it is suitable for children from 9 months. The bananas sweeten the cake beautifully, so no sugar is needed and cinnamon adds flair and suppleness to the cake along with the carrot and apple.
Another indisputable advantage is that it is really quick and easy, the preparation will not take you more than 20 minutes plus baking time. Who will try it?
Preheat the oven to 170 degrees.
Put the egg whites in one bowl and the yolks in the other. Whip solid snow from the egg whites.
Add bananas to the yolks and beat. Add finely grated apple and carrot, carob and cinnamon and mix. Then add flour and baking powder and mix again. Add oil to the mixture as needed.
Carefully mix the egg whites into the dough prepared in this way. Pour the mixture into a greased and floured mold.
Bake for about 45-50 minutes, but test with a skewer to see if the cake is really baked. Then let the cake cool down.
In the meantime, prepare the cream. Put bananas in a bowl and mash with a fork. Then add mascarpone and vanilla and let whisk for a few minutes. Separate about 3 spoons from the cream prepared in this way and put it in the fridge for a while. Use the rest of the cream to for the cake.
Take the cooled cake out of the mold and cut it once. Put half of the cream on one part of the cake and cover with the other part and spread it with the remaining cream. Take the cream out of the fridge and decorate the cake with it. Finally, can add fruit according to the season or taste.
Leave the cake in the fridge for at least 2 hours and then serve. Bon appetit.
