Zucchini pizza is my favorite and light dinner. You can put on it anything you like and have a great zucchini pizza in different variations during the season. This zucchini pizza is more on the fork than like a classic pizza in the hand, but it is still very tasty. Who still has zucchini at home, will you try it?
Preheat the oven to 170 degrees. Grate the zucchini finely and squeeze all the water out of it. Then add finely grated cheese, flour, eggs, pizza spices, salt and pepper and mix well. Put the dough on a baking sheet and bake for 20-30 minutes until golden.
Once the pizza is baked, sprinkle it with tomato puree and sprinkle gently with oregano. Add to pizza anything you like. I like mozzarella, ham, olives, tomatoes and basil. Sometimes I add mushrooms or exchange ham for prosciutto. Then bake the pizza for a few more minutes and you can serve it.
